There has been much confusion about olive oil. It has been touted as the "magical" ingredient in the Mediterranean diet. The Lyon study was the main study that stated that olive oil was "heart healthy." But there is some information that says that olive oil wasn't even used for that study. It seems that the study participants didn't like the taste of the olive oil so canola was substituted for the olive oil. Also, that study was basically flawed since it compared apples living in the Mediterranean area with oranges living in the United States.
my experience
One day circa 1992, just before heading out for a 20 mile run around Lake Wawasee, my wife offered me some toast with olive oil spread on it in place of margarine. About ten miles into the run I developed chest pain that continued to worsen the further I ran. Eventually I would stop at twelve miles, get in the sag-wag and ride home where I would spend the rest of the afternoon with severe chest pain and that peculiar "uneasy" feeling you get with myocardial ischemia. That was my last olive oil.
Dr. Robert Vogel
Dr. Vogel wanted to find out how olive oil, fish oil and canola
oil affects your arteries and used the brachial artery tourniquet test to measure reduction in blood flow following ingestion of these oils. Olive oil reduced blood flow a "whopping 31%, the canola 10% and the fish oil only 2%. These results were surprising in light of the Lyon study that had declared olive oil "heart healthy."
endothelial damage
Apparently olive oil causes significant damage to the cells
that line the inside of your arteries, the endothelial cells.
This damage then triggers build-up of plaques / atherosclerosis.

Caldwell B. Esselstyn Jr. M.D.
Dr. Esselstyn tells a story of one of his patients who had been
doing well for some fourteen years only to start getting angina
again in 2004. On close questioning it was discovered that this
patient had started eating "heart healthy" olive oil daily. Dr. Esselstyn advised him to stop the olive oil and within seven weeks the angina had stopped completely. Or, as Dr. Esselstyn broadcasts during one of his videos about the use of plant based diets for treatment of coronary artery disease ..."No Oils."
Dr. Ornish advises that the best oils are canola, fish oil, flaxseed oil and non-stick cooking sprays.

There was a time when I used to love to fry things such as
burritos, black bean burgers, soy burgers and tempeh burgers.
I have replaced frying oils with a combination of soy sauce
(Shoyu) and water at moderate temperature. Much fewer calories and much easier to digest. I haven't really ever missed the fried foods. For more information see the completely vegan and sugar-free MericleDiet.

For salads just make your own salad dressing and leave out the oil. It probably won't be as tasty as the same dressing made with oil, but then, at least, you will be around to complain.
conclusion
Having experienced more than enough angina(chest pain) in my days, I think I'll continue to do without olive oil.
