Why Organic

some current opinion

A recent article by a well known health guru dismisses the organic food movement as "Organic Food Too Little Too Late." I have always respected this doctor and I have referenced him many times. I don't always agree with him but the idea that organic food is not necessary is not one that I can let go without some comment. Even this guru waffles a bit at the start of the article admitting that he buys organic food for himself and family.

people will get better on conventionally grown food

No one would argue with this statement at all as long as there has been some improvement in eating habits. This is what I experienced when I first went vegan in 1977. I went from being a meat and dairy eater to vegan in about a month and felt so much better that I have never looked back. This doctor references the organic meat and dairy movement and I think blindly includes the vegan/vegetarian farms with them. I wouldn't argue that switching from non-organic meat and dairy to organic meat and dairy might not yield any significant improvement. But, any "improvement in eating habits such as eliminating meat, dairy and sugar" will yield a corresponding improvement in health.

then and now

In the late seventies the organic food movement was just starting, as was extremely destructive commercial farming. In the seventies a tomato or apple still tasted like a tomato or an apple. This all changed in the eighties as the commercial farms perfected raising facsimile crops from dead soil with expensive corporate liquid fertilizers. Maybe in the seventies there would have been little difference in improved health between the conventionally grown or organically grown food. However today the improvement with organic food will be much larger. Not only are you not exposed to all the pesticide residues but the nutritional density of commercial foods is almost nonexistent compared to organic foods raised from heirloom seeds.

In 1995 or so I had the pleasure of hearing Dr. Lewis Regenstein speak in Athens, Georgia. Dr. Regenstein is author of "How To Survive in America the Poisoned." One of Dr. Regenstein's main points is that most pesticide residues are fat soluble, not water soluble. This is especially relevant to the human who ingests large amounts of fat as is typical for meat and dairy. Make no mistake, if you cut down or eliminate meat and dairy from your diet you will significantly reduce your exposure to these pesticides. However, there is little if any fat in cotton and we are not even talking about eating it, just having it next to your skin. Personally, I prefer to reduce or eliminate as much as possible any exposure especially as occurs with some of the more heavily sprayed crops such as cotton and corn. Over time, these smaller amounts of pesticide residues will accumulate and even though you are vegetarian or vegan, you or someone close to you turns up with cancer. How could this be? ... I asked myself in 1995. If I could avoid having to ask myself this question -I certainly would.

fast forward to 1995

In 1995 my ex-wife finds a lump in her left breast which was by ultrasound malignant. At that point we went completely organic. Once again we felt so much better we never looked back. Maybe had we been organic all along, the lesion in her left breast (which later proved to be malignant) would not have developed. The difference in how satisfied you felt after a meal was amazing. The same amount of food or even less would yield satiety we had never experienced. We would finish lunch and seriously not get hungry till the next day. While organic food may cost more, it is easily more cost effective and you will find -a little organic food goes a long way. In this day and age of extensive commercial farm penetrance, the only human nutrition you can get is from your local organic farmer. You don't have to look very far to see the results of commercial farming, malnourishment, obesity and disease -everywhere.

human biochemistry

Like it or not, we evolved with our human biochemistry -specifically hormonal regulation of metabolism by the insulin/glucagon system and complex protein chains that function as enzymes. These protein chains are every bit as specific as your DNA from which they are derived. You can argue, protest, carry-on or whatever -it is what you have and it is the same for me. For thousands of years we evolved on the food that was available before "commercial farming" and "genetically modified foods." Our protein chains / enzymes are specific to "pre" commercial foods. This is a "key in a lock." You can eat the new commercial foods, not get satisfied, eat some more of them and still not get satisfied. What you will get is however -fat.

the organic food movement is our last hope of preserving our food chain and planet Earth

There is no question, the only hope for preserving food as we evolved on, is the local organic farmer using heirloom seeds to produce beans, grains, fruits and veggies, not the behemoth commercial food producers irregardless of whether they pose as organic or not. These local farms produce food that the human body can actually utilize -foods grown in living soil fertilized by the life in the soil. Having grown up in Indiana I can personally attest to the changes in the topsoil here since commercial farming started. What used to be fertile black soil teeming with all kinds of life is now lifeless tan dust. I would like to leave you with this true story(quote) from Ferris Farms in Southern Michigan. Ferris Farms was organic before organic was even known.

It was teeming with life and the most remarkable thing; a rustling sound of huge worms pulling pieces of dry leaves into their holes. I had the best dinner tonight, I sauteed some onions and fresh garlic in my wok, then put it on the side then sauteed a red bell pepper, tofu, and broccoli, ( put that on the side) then took some cooked brown rice and fried it up adding water and soy sauce, then added it all together, then made a fresh salad with red onions, spinach leaves,romaine lettuce. That was the best meal I've had in sooooooo long!!!!! mcdonalds ( or any restaurant , for that matter)couldn't touch that meal !!!!! Thanks Yolanda
